Originating from Santiago, Chile, his culinary journey is shaped by diverse global influences from countries such as Chile, Argentina, the United States, Mexico, Trinidad & Tobago, and Greece. These experiences have enriched his understanding of flavors, techniques, and traditions, fueling his dedication to the craft and his respect for the art of fine dining.

With over many years working in high-end restaurants and luxury culinary environments, Diego continuously refines his skillset and vision. Now, at Latitud 10° Norte, he collaborates with Chef Erick Aguero to bring a unique fusion of Thai inspiration and Costa Rican essence to the table. This concept harmonizes two cultures connected not only by geography but by a shared passion for bold flavors, quality ingredients, and innovative culinary techniques — delivering a vibrant and unforgettable dining journey.
